CAULIFLOWER, MINT & PISTACHIO SALAD

A salad recipe even the salad haters will enjoy!💫
✨20g chopped parsley
✨10g chopped mint
✨1 tsp ground cumin
✨1.5 tbsp lemon juice
✨40g pistachio kernels, chopped and toasted in a pan
✨1-2 tbsp oil
1. Pre-heat oven to 200C
2. Grate a third of the cauliflower and set aside in a bowl then cut remaining cauliflower into florets.
3. Add florets into a bowl with chopped onion. Mix in 1-2 tbsp oil and a sprinkle of salt + pepper then add to lined baking tray and pop into the oven for approx 20min.
4. Once it has cooked and cooled, put into a bowl and add grated cauliflower along with all the other ingredients and additional oil if needed, toss together and serve!
