A great high protein dinner! Also great for meal prep💪🏼

✨Red lentil pasta (tesco, sainsburys own are great)

✨Vegan meatballs (I love @lindamccartneyfoods tomato + basil frozen ones)

✨Garlic and herb passata 500g

✨1 red pepper, diced

✨Onion (I used frozen bcs easier - approx 1/2 of an onion)

✨1 heaped tsp garlic

✨1/2 tsp chilli

✨Splash of red wine

✨1/4-1/2 tsp of: oregano, thyme, smoked paprika

✨1 tbsp tomato purée

✨Oil for cooking


1. Add oil to your pan along with some onions.

2. Add garlic, chilli and then a chopped pepper. Sauté until the peppers become softer.

3. Add all other ingredients and allow it all to simmer.

4. Cook your meatballs and pasta!

5. Serve and gobble up👹
