LETTUCE WRAPS
This recipe can be made vegan by using vegan meat alternative or scrambled tofu to resemble the mince texture. It also makes 4 servings so reduce the quantities to suit you. This is great for a starter, nibble or your main!
Ingredients:
- 400-450g beef mince, chicken, turkey or vegan alternative (lentils, mince, chicken). (You can adjust this to suit your protein goal too).
- 1 red pepper, finely chopped
- 2 spring onions, chopped
- 2 tsbp oil (I like garlic olive oil)
- 5cm piece ginger, peeled and finely grated (alternatively, you can use ginger powder or frozen ginger)
- 2 cloves of garlic, minced (or garlic granules)
- Optional chilli or paprika for some spice
- 30ml soy sauce
- 60ml hoisin sauce
- 30g chopped peanuts
- Lettuce (obviously...)
Instructions:
- Heat pan/skillet to medium heat, add oil and meat, cook.
- Stir in ginger, onions, garlic, soy sauce, pepper, hoisin and cook for 5 minutes.
- Change to low heat and stir in peanuts.
- Wash lettuce!
- Once everything is cooked, serve up the mince into the lettuce like little tacos!
