🍌MINT CHOC MUFFINS🍌

These are what you would call a “healthier“ muffin! But my goodness, my whole family are hoooked on these! SO TASTY.

If you’re not a mint fan, switch the peppermint for orange or vanilla extract! I just use the cup measurements for this as it makes it easier!


Breakfast idea: serve with Greek yoghurt (or vegan greek style or any Alpro yog). Or, have on the side with a protien smoothie.

Or, have as a snack :)

MAKES 12 MUFFINS


For 1 muffin:


Recipe:

✨3 ripe bananas

✨2 cups of oats blended into a flour (or just use Myvegan instant oats)

✨1/4 cup smooth almond butter

✨1/2 cup sugar (I use golden caster but you can use coconut or whatever you prefer)

✨1/2 cup cocoa powder (I use tescos own)

✨1/3 cup choc chips or chopped up choc

✨1 tsp peppermint extract

✨1 tbsp apple cider vinegar

✨2 tsp baking powder

✨1 tsp bicarbonate of soda

✨1/2 cup dairy free milk (I use unsweetened soya)

✨Pinch of salt


👉🏼Pre heat oven to 180C

👉🏼Mix together oat flour, cocoa powder, baking powder, bicarbonate of soda and salt ensuring there are no lumps

👉🏼Mash bananas with fork and mix in almond butter, sugar, peppermint (or alternative), vinegar and milk. Pour into bowl of dry ingredients and mix. 👉🏼Mix in choc chips or chunks. It’s okay if the mixture is THICC.

👉🏼Optional to line muffin tray with cases or wipe down with oil/butter.

👉🏼Spoon mixture into 12 muffins. Sprinkle more choc on top. 👉🏼Pop into the oven for approx 22min. Check cooked by piercing with cocktail stick or knife.
