SHREDDED CHICKEN TOMATO PASTA

Over 40g of protein💪🏼

One serving approx 43g protein, 11g fat and 70g carbs!


I love to have this for dinner when I want something easy, fast and tasty! Everything I used was bought from Tesco.


Ingredients:

✨70g red lentil pasta

✨75g vegan chicken

✨Veggies: I used half a red pepper + spinach

✨150g garlic and herb passata

✨25g free from cream cheese

✨10g tomato purée

✨1-2 tsp nutritional yeast

✨1/2 tsp Italian herbs

✨1/4 tsp smoked paprika

✨1/4 tsp garlic granules

✨Salt + pepper

✨Oil for pan


Method:

1️⃣Weigh out all ingredients

2️⃣Break up chicken pieces with hands to resemble shredded chicken! If using frozen, do it after it is cooked with scissors!

3️⃣Stir fry vegan chicken and veggies of choice (if using spinach, best to mix it in at the end)

4️⃣Cook pasta and drain

5️⃣Add all other ingredients to the pan including pasta, mix all together and add spinach!

6️⃣Serve and enjoy!
