Guysssss this is my favourite quick meal to make. It is also great for meal prepping! You can also increase the protein even further by using chicken instead of tofu (vegan or not).

If you are a fan of noodles and peanut butter, you will LOVE this.

This makes 2 servings or one larger serving!

Using tofu:

Using what the cluck vegan chicken:

For peanut sauce:

✨1 tbsp smooth peanut butter (I used Myvegan)

✨1.5tbsp soy sauce

✨2 tbsp Alpro soy single cream (optional)

✨1 tsp sweet chilli sauce

✨Squeeze of Sriracha sauce

✨Sprinkle of garlic granules and some chilli flakes

✨Optional little bit of liquid smoke😍

For the protein:

✨100g tofoo (about 1/3 of a block) OR VEGAN CHICKEN (vegetarian butcher) OR vegan beef strips (taste & glory)

✨Sprinkle of garlic granules

✨1-2 generous tbsp of cornflour (only if using tofu)

✨1 tbsp soy sauce

Additional items:

✨1 tbsp olive oil for pan + noodles for one person (I used Sainsburys own rice noodles, a whole nest)

✨Veggies of choice

  1. Chop tofu and mix in cornflour then soy sauce and garlic. Or, add soy sauce and garlic to chicken/beef. Set aside.

  2. Mix together peanut sauce and set aside.

  3. Chop vegetables (I used 1 red pepper)

  4. Fry veggies and tofu in a pan with some oil.

  5. Cook noodles according to package.

  6. Stir in half the peanut sauce to the tofu and veggies. Then, add in cooked noodles and the rest of the sauce + a splash of water!
